WUNDERLOAF is a one-woman cottage bakery in central Houston, making small batches of slowly fermented, artisan bread for the neighborhood, in the neighborhood.


Founded and run by Noemi Mollet:

“I always loved to bake. It is also a way to connect to my Swiss roots and recreate memories by baking the bread I miss from home. For many years I baked our weekly bread. When I intensified my baking in 2019, it soon became a social endeavor rooted in my community. I started sharing my bread more widely and that’s how WUNDERLOAF was born! 


Initially self-taught over many years, I’ve recently started to deepen my knowledge and get new inspiration and expertise through workshops, master classes, and internships.

To me, bread means home and community. It is the most basic thing but there is endless room to explore, research, and grow––the journey in ongoing! Baking creates a great balance with my first profession––architecture––and they are also very similar in a way: both fulfil basic needs, and are dependent on care for details and craft.”

1—Pre-Order For Pick Up
(Tuesdays & Fridays)

Tuesday Bread: Preorders open Saturday morning to Sunday 6 pm
A simple “one loaf menu” with a versatile loaf to get you through the week.

Friday Bread: Preorders open Monday afternoo to Wednesday noon.
There is always the Everydayloaf, next to a few weekly specials. I try to offer a versatile bread, a more whole grain loaf, and sometimes one with special ingredients.

Friday Extra Loaves: Preorders open Friday around noon. Same day pick up.

2—Subscriptions
(Tuesdays & Fridays)

Do you love traditions and prefer a weekly loaf without even thinking about it?

It’s easy! You pay for a set of  5 or 10 loaves of your chosen subscription (Everyday- or surprise loaf, starting at $38), and get one loaf per week (or every other week).

The advantage of being a subscriber:
—Get your bread delivered to your door for free if in my delivery zone* (see below). 
—Better price than single orders, because we’re keeping things simple.

Add any extra loaves from the weekly menu and they’ll be delivered to/waiting for you with your subscription.

Please be mindful about the designated pick up time. If you do not pick up your order during the given time window, WUNDERLOAF is not responsible for your order. We do our best to accomodate changes if we get a heads-up.    


Sometimes things happen unplanned in my little kitchen. If an item becomes unavailable or we have to cancel an order, it will be replaced with a similar item or postponed to the next week.

WUNDERLOAF bread is hand crafted in my home kitchen in accordance with the Texas Cottage Food Law.

This means, having a food handlers license, but no inspection by a health department.

No wholesale available.
